The most passionate chef I've ever heard talk about tomatoes is Chef Jose Andreas. He expresses his passion in his beautiful English. His confidence and passion inspired this episode.
So, let me ask you: do you like gazpacho? Did you know that there are many different varieties of gazpacho? Is there a regional food where you come from that people feel strongly about?
In today's episode, we'll learn about gazpacho: its history, its ingredients, and how to make it. People are passionate about their version of gazpacho - I wondered why?
Here is the recipe I use from my friend Nadine:
Ingredients:
2-3 slices of white bread or baguette, torn into pieces
1 pound of tomatoes: seeded and diced
1 cucumber: seeded, peeled and chopped into large chunks
1 green pepper: seeded and chopped
3-4 cloves of garlic, peeled and chopped
1/2 cup of good olive oil
a pinch of salt
2-3 tablespoons of good sherry vinegar
Soak the bread in water for a few minutes. Remove from the water and gently squeeze the water out. Put bread and all the other ingredients in a blender and blend until smooth. Taste and adjust the seasonings. Chill for one hour or serve right away.

We have similar local food in the northern part of Iran. The ingredients are tomatoes, eggs, and garlic cooked with a spoonful of oil. It’s chunky as well.

Very interesting! There’s a cold summer soup that’s popular in Bulgaria, called “ta-ra-TOR”. I love it! It’s made of shredded or chopped cucumbers and yogurt diluted with water. It’s spiced up with a bit of olive oil, garlic and dill, and some people add chopped walnuts too. It’s delicious and so refreshing.
